A hearty Chinese soup recipe made with sweet corn, carrots, green beans, vegetable stock, soy sauce and vinegar. Sweet Corn Soup can be eaten during winters and summers both and tastes delicious when served piping hot.
In a large pot, add stock, carrot, green beans, frozen corn, cream style sweetcorn, vinegar and soy sauce. Bring to the boil.
Add sugar and sesame oil. Give it a nice stir and cook for 4-5 minutes.
In a small bowl, add cornflour and water. Mix well to form a slurry and add to the soup. Cook the soup on medium heat for 7-8 minutes or until thick.
Add salt and pepper to taste. Mix well
Once the soup has thickened to the desired consistency, ladle it into serving bowls and serve hot.
