A healthy vegetarian recipe – Spicy mixed vegetables is made with different vegetables, kidney beans and hot sauce. It is best served with brown rice.
In a medium sized pan, toast the sesame seeds and set aside.
In the same pan, heat olive oil over medium heat and add garlic. Cook for a minute, until fragrant. Make sure not to brown the garlic.
Next, add kidney beans, zucchini, tomato, okra, corns and salt to taste. Mix well. Add tomato puree and mix again.
Cover and cook the vegetables for 7-8 minutes till the vegetables become tender.
Once cooked, remove the lid, add oregano, pepper and hot/chilli sauce. Gently mix the vegetables and transfer into a serving bowl.
Garnish with toasted sesame seeds and coriander leaves. Serve hot with brown rice.
