Prawn Malai Curry also known as Chingri Malai Curry in Bengali where Chingri means the Prawn or Shrimp, is a Bengali prawn curry recipe made with coconut milk, spices and prawns. Prawn Malai Curry can be made with both frozen or fresh or shelled or de-shelled prawns. Traditionally, the prawns are de-shelled and a flavourful stock is made with the shells to add to the curry. Adding this stock helps elevate the flavour of the curry. Chingri Malai Curry is best served hot with steamed rice.
