A delicious Indian street food recipe. Masala Egg Toast is made with boiled eggs, raw eggs, onion, tomato, green chillies, butter, ginger garlic paste and spices. It is a very popular street food dish and tastes best when eaten with toast.
In a pan, heat a little oil over medium heat, add bread to the pan and toast from both the sides for a minute, until golden brown. Repeat with remaining bread, cut the bread diagonally into a triangle shape and transfer to a serving platter. Keep aside.
In the same pan, heat 2 tbsp oil over medium heat and add the boiled eggs, onion, green chillies and tomato. Mix well and press down with a spatula.
Add butter and mix again. Add ginger-garlic paste, coriander powder, red chilli powder, garam masala, cumin powder, turmeric and salt. Mix well and mash using a potato masher.
Next, add water to deglaze and continue to cook for 2-3 minutes. Now add the raw eggs to the pan and mix for a minute.
Once cooked, remove from heat, spoon the masala egg over the toast, garnish with chopped coriander and serve hot
