A quick & easy mango, strawberry & blackberry ice cream recipe. No ice cream maker required.
Freeze the diced mangoes and strawberries & blackberries if using fresh, for 2 hours or until completely frozen.
In a food processor, add the frozen mangoes, 1 tbsp sugar and 1 tbsp cream. Process them on high and scrape the sides in between and process again until smooth. Transfer the mango ice cream into a container and freeze again to set properly.
Wash and dry the food processor and add strawberries, blackberries, 1 tbsp sugar and 1 tbsp cream. Repeat the same process as the mango ice cream and freeze.
Once both the ice creams are frozen, scoop them out into cocktail glass or ice cream bowl, garnish with mint sprig and serve immediately.
Note: Mango, strawberry and blackberry can be substituted with any fruit of one’s choice. Fresh strawberries and blackberries can be used in place of frozen ones. More sugar can be added for extra sweetness.
